Baked Granola
What’s not to love about granola - the nuttiness, the crunch, and the fact that it actually keeps you going through the morning.
I first came across Bircher Muesli on my trips to Switzerland. It quickly became a favourite. When I tried recreating it at home, I realised that the granola you buy off the shelf is not just expensive, but also full of sugar.
So I began experimenting in my own kitchen. The base is simple - oats and seeds - and once you have that ready, you can build your breakfast however you like.
Freshly made granola sits happily in a jar for weeks. Which means Bircher Muesli is never too far away.

Ingredients
2 cups oats
1½ tbsp sunflower seeds
1 tbsp pumpkin seeds
1 tbsp flax seeds
¼ cup freshly squeezed orange juice
2 tbsp olive oil
Method
Preheat the oven to 180°C.
Mix the orange juice into the oats. Add the seeds and combine well.
Spread the mixture evenly on a baking tray.
Bake for about 45 minutes, stirring occasionally so it browns evenly.
Remove and let it cool completely.

Once cooled, store in a glass jar - it keeps well for a couple of weeks.
This becomes your base for Bircher Muesli, or even a quick bowl with yoghurt and fruit.
